The weather is getting chilly around these parts, and at our house it means Pumpkin!
Pumpkin and squash make their way into almost every meal during the fall. We eat pumpkin soup, pumpkin bread, squash soup, roasted pumpkin, pepitas, pumpkin pie, candied pumpkin and so much more.
If you are stuck for an evening meal idea try this:
Take an acorn squash, half it, seed it, place it face down in a dish with a little water. Bake at 350 for 40 minutes to an hour, or until you suddenly remember that you have something in the oven! And it's burning!
Take the squash out of the oven, flip it over, rub the inside with about 1 Tbsp. butter and 1 Tbsp apricot preserves. Put under the broiler for 5 minutes. If you are feeling really crazy, and we were last night, sprinkle with a little chorizo.
